Recipes to try include Apricot Souffle, Almond Bread, Honey-Spelt Scones and an Eggplant Curry with Quinoa. Those that I was struck dumb by included a Borscht gelatin ring (looks exactly how it sounds and completely blew my mind! whaat?) and Beet Pizza.
The recipes are divided into Morning, Noon and Night sections, and the colorful photographs look appetizing.
Pros - wide variety of ingredients are used.
Cons - has more sweeteners than I would expect in a 'healthy' cookbook.
It is a very interesting book, and worth a read. ( )
