This is quite an eye-opener for those who, like me, buy Maggi or Pick 'n Pay two-minute noodles from the hypermarket down the road; the variety of noodles, it would seem, is endless.

The introduction gives noodle cooking techniques to put one in the right frame of mind for this hot and spicy East meets West collection of recipes. Interesting to not, the only metnion of boiling is in noodle soup.

The huge noodle family includes vegetarian, cellophane, and egg noodles, rice, Soba, Somen and Udon noodles, even rice vermicelli. Instant noodles are included as an after thought.

In addition to the standard Chow mein, you can try frie thai noodles, stir-fried noodles, crisp noodles, crispy fried vermicelli, chicken and noodle soup, toasted noodles and Thai noodle salad.

If this book doesn't inspire you to search out a speciality shop in search of new and exciting noodle varieties, nothing will.
