Fascinating cookbook from London in the late 1800s (no copyright is in the book, but all of the newspaper articles cited about Mrs. Marshall's cookery school are from 1887.). Includes recipes and instructions for how to prepare sauces, stocks, etc. The presentation often requires using molds to shape the dish, including meat dishes. Also includes advertisements for various cooking utensils, sauces, etc., giving a good overview of cooking technology.
