For the past few months, I've been working on being more healthy and dragging my family along for the ride. Part of that is moving toward a plant-based diet. I don't see us ever completely giving up meat (my wife and son love steak and sausages too much at this point and pushing too far will only make them rebel completely) but they're both on board for trying anything I make. Since I'm the one who does 99% of the shopping and cooking, there's been much more pressure to find healthful foods that they'll enjoy. As a result, my collection of vegan cookbooks has exploded. From one to about 10 and it continues to grow.

During my last trip to NetGalley, I decided to check out the offerings for vegan cookbooks and was happy to see there were two available for request! Vegan in an Instant was extra appealing because I love any recipe I can use the Instant Pot for. I'm all about fast, convenient, one pot meals.

Because I got the book through NetGalley, it's a PDF and not a glossy, paper book which will be much prettier and, for folks like me, more user-friendly. When cooking, I like to have physical books or recipes but will drag out a device if I have to use electronic. Definitely prefer the paper for cookbooks though.

Anyway, The pictures in Vegan in an Instant are beautiful and tempted me to try recipes that normally wouldn't have caught my eye. I ended up with a list of only six dishes that sounded good to me and that I thought I'd have a chance of pleasing my family. There were a few others that looked good but only used the instant pot for steaming or softening potatoes and the rest of the dish was cooked either on the stove top or oven. If I'm going to pull the instant pot out, I want it to be the only pot I use. Lazy? Maybe, but I know myself enough to know that I might note the recipe as something I want to try, but I'm not going to.

I think if you're looking for more plant-based meals and have an instant pot, you will very likely find a few recipes that will make your mouth water while flipping through the pages. You'll have to decide whether there are enough to make the purchase worthwhile.

Very few of these recipes are gluten-free, lactose-free, or vegetarian, so this wasn't useful to my family. The pictures and tone are bright and encouraging which made this a fun read. I did try one recipe: Broiled Peach and Biscotti Parfaits. I used almond milk ice cream instead of cow milk ice cream and Oh My Word, it was fabulous! If she ever writes a cookbook for mothers with food allergies, I'll probably by it sight unseen.

What a beautiful book. Trying to decide if it is a cookbook with pictures or an art book with recipes. If you do a meatless meal a week there are so many lovely recipes to choose from in this book.

This book would make a lovely mother's day gift to the moms in your life.
