Donaldo Soviero is the founder and director of the Cooking School of Umbria, located outside of Perugia in Italy. He has more than thirty years' experience as a restaurateur, hotelier, and food consultant. He has owned and operated more than ten restaurants, was consultant to the five-star mostrar más Duesenberg restaurant in Denver, and was director of the Hotel and Restaurant Management School at the University of New Mexico. This book is interesting and informative to read, I've yet to do much cooking out of it though. Not the books fault. :)
