The Grammar of Cookery por Philip Harben
Although somewhat dated, this remains one of my favourite cookery books. It's nice and compact, yet covers a wide range of food types and dishes, including some discussion of how various cooking techniques work. This provides a good basis for intelligent experimentation rather than slavishly following recipes exactly as presented. The cover picture of Harben's head on a plate is very amusing too.
