Damn me for a conservative, but chili is supposed to be a highly spiced soup or stew based on meat and a certain sort of seasoning based on tang and heat. Too many of these recipes are off the rez; they are very frou-frou and the sort of dish one would expect to get at a cafe where an artichoke sandwich costs $12. Almost all of them are elaborate and require ingredients far beyond the ken of the grocery store. It isn't a practical book for most people. (

Great chili cookbook with plenty of unusual variants to try. I like the Havana Moon 'chili' in particular. (
