Weeknight One-Pot Vegan Cooking may only require you to use one dish, but I don't normally have half of the ingredients on hand. Rum? Espresso powder? Sure, I could get those things, but every recipe shouldn't have one or two super special ingredients that require a trip to the store.
Additionally, I tried the Old Fashioned Mushrooms and Dumplings, and the result was not great. There was something off about the flavor, and the mushrooms and onions had a slightly uncooked feel to their texture. The only bright spot was the dumplings, which did taste okay. The broth they were cooked in (the soup that's the bulk of the meal), wasn't the best, but I think they might taste better in a different recipe -- oh, like my mom's potato soup!
