I haven't really made of formal list of these--it's something I should do--but I love running across Homeric allusions in books that have nothing to do with the epics. Recently, as I was rereading Barchester Towers, Trollope said that if he'd had the pen of an epic poet, he'd sing the noble wrath of the Archdeacon. Delightful--particularly when there are so many heirs of Obadiah Slope on the loose today!
In The Three Musketeers, D'Artagnan is said to see Porthos as Ajax, Aramis as Joseph, and Athos as Achilles.
Rudyard Kipling, in The Complete Stalky and Company, refers to Mr. King (the formidable Latin master), as "that much-enduring man" who addresses "winged words" to his erring student (the young Kipling in his fictional persona as Beetle). Not only did this add humor to the story, it's a pithy way of conveying Mr. King's character--even if Kipling meant it satirically.
Does anyone have any such gems to add? I'd love to see them!

in Patrick O'Brian's 'Aubrey/Maturin' series of 20 books i can think of at least seven that mention or quote from Homer, and possibly more.

Thanks, Enodia. I should have thought of O'Brian right away!

Barbara Hambly's Benjamin January series is another source. The three main characters can all toss out classical quotes; and in Days of the Dead, there's a mad Don who--when he's not conversing with the Aztec gods--carries on about the perfidy of Helen of Troy. That novel contains a good deal of discussion of the Iliad and also of events, such as the suicide of Ajax, that take place just outside the epic, so to speak.

Helen of Troy by Betany Hughes, which recently read, is all about the hundreds of allusions to Helen in popular culture from the ancient times right through to the present. A good read on the subject.
