I was recently given a "warning" by my doctor that I should monitor my blood sugar on a regular basis. He calls what I have "insulin resistance" rather than Type 2 Diabetes. Along with monitoring my BS, I've also been eating a low carb diet. It doesn't work for everyone, but it's working for me.

Anyone eating low carbs (for whatever reason)--do you have a favorite cookbook?

I'm using one called The Low-Carb Comfort Food Cookbook, by Eades & Eades. Frankly, the book is about as appealing as a lecture on economic theory (OK, I'm sure some people would find that appealing). The cover shows the authors in their lab coats--seriously? However--I've made several recipes from this book, and I'm happily surprised.

One of my favorites is "Magic Rolls"--4 grams of carb per roll that I use in place of bread. I eat one of these rolls for breakfast with a fried egg and slice of ham--excellent! As they say in the recipe, one of these replaces "that hopelessly high-carb bagel." I like these rolls a lot, but the fact that I haven't had any bread of any kind for two months may be one reason why they taste so good to me. But this diet has dropped my BS into the "normal" range, so I'm not complaining. And I'm feeling much better!

I've been on a low carb diet for over two years now, after reading Good Calories, Bad Calories. So far, I haven't found any cookbooks that are specifically low-carb that I like, I prefer using my other cookbooks and tweaking the recipes. Diet cookbooks in general always seem to forget that cookbooks should be about food, not nutrition.

If I want something resembling bread, I'll make the almond crackers that I found on an Atkins forum. Slivered (or ground) almonds, egg whites, and a bit of salt. Fry like small pancakes. Great with cheese.

I have recently been using To Quiet Inflammation. I don't have the book with me right this minute so I'll have to go Amazoning to get the author, etc. However, I am very interested in low carb, low sugar, low fat foods.
