An absolutely excellent introduction to Chinese cooking. The first six menus work you through a wide variety of techniques, and all taste great. Years later (I got the book in '79) I still find a "new" recipe from time to time.
The layout of each recipe is kept simple; the steps are well defined. The book includes front matter on what to look for in ingredients. The appendices include pointers to where to get supplies, which, both over time and with the advent of the Internet, are likely dated. The index is thorough and complete.
