I have recently started using my Instant Pot more and of course, I am always interested in finding new and good recipes. The Healthy Meal Prep Instant Pot Cookbook by Carrie Forrest is a good resource for finding those recipes I am looking for.

The sections are as follows:
Healthy Food in an Instant
Basics and Staples
Breakfast and Brunch
Grains, Beans, and Veggies
Soups, Stews, and Chilis
Seafood and Poultry Mains
Beef and Pork Mains

In the first chapter I was kind of impressed with doing rice in the slow cooker, 8 minutes, I have a rice cooker and it takes longer than that and we know that cooking rice on the stovetop takes considerably longer. I always find in trying to time all of the meal that I am always finding that the rice takes the longest to prepare.
Hard-boiled eggs in the Instant Pot? oh yes, and it is great! In mine, it takes a cup of water, the eggs and 8 minutes later you have perfect hard boiled eggs. Plus there is no green/gray ring around the yolk! Love it!

With a lot of the recipes, there is, of course, prep work, you may have to saute some of the ingredients first and then cook in the pot. My favorite section is the soups and stews. Although I do love to cook soup on the stovetop all day sometimes you just need it quicker. Making broth with leftover chicken and bones is a must. The best broth you can have.

There are 75 healthy recipes that are perfect for the home cook who does not want to spend a lot of time cooking or the cook who just wants a great meal to serve. Some of the recipes include Hearty Beef Chili, Lemon Piccata Chicken, Chocolate- Banana Quinoa Breakfast Bowls, Sweet Potatoes and Vegetable Lo Mein among others.

Easy to read and follow, with tips to help in the cooking process. Plus the recipes will let you know if they are gluten-free, vegan, freezer friendly, one pot or dairy free. Very helpful.

So if you have had your Instant Pot for awhile or a newbie, I highly recommend thing cookbook! I love mine!

When I first opened "Healthy Meal Prep Instant Pot® Cookbook: No-Fuss Recipes for Nutritious, Ready-to-Go Meals" and looked at the recipes, I immediately said "YUM"! Author Carrie Forrest has put together a terrific collection of 75 fabulous recipes, guidelines for healthful eating, Instant Pot usage tips, a meal prep guide, and so much more. One very important tip: always use a minimum of one cup of cooking liquid with each recipe. Follow safety procedures as recommended by the manufacturer. Pressure cooking became popular with American cooks in the 1950's, and it has evolved through the years into the Instant Pot cooking method that we know and love today. This cookbook is actually authorized by the Instant Pot brand, and it includes many delicious recipes like these: "Cinnamon-Apple Steel-Cut Oats"; "Broccoli and Cheddar Crustless Quiche"; "Spanish Rice"; "Vegetable Minestrone with Pasta"; "Lemon-Garlic Shrimp Scampi"; "Honey Sesame Chicken"; "Pot Roast with Carrots and Potatoes"; "Hawaiian Pineapple Pork"; and "Polish Sausage with Sauerkraut:'. I had the ingredients on hand to make "Loaded Baked Potato Soup", and it was so good! Save time, use less fat and more healthful ingredients, follow helpful meal prep techniques, and enjoy a variety of "clean eating" dishes that you have prepared for yourself and your family and friends.
