"Japanese cuisine as it is projected and valued today is a modern construct conceived in the midst of the twentieth-century historical dynamics." (p. 175)

Esoteric and academic, this monograph is not a casual read or end-table book. It's what good scholarly writing should be: a well-organized and supported, synthetic analysis of its topic presented in the voice of social history rich with cultural anthropology. In this case, the topic is how Japanese culture as it is understood is a creation of the last 150 years, and Japanese cuisine has been both developed alongside that and directly linked to the cultural construction. From playing catch-up with the industrial West in the wake of the Meiji Restoration to military mobilization to reconstruction after the devastation of WWII, it's deeply interesting to see how a single Japanese identity was inculcated by a series of administrations into regionally-distinct (even Balkanized) populations. This book is a fine learning experience and a great resource for primary sources.… (más)

While one suspects that this monograph might already be a little dated, since how there is nothing more Japanese then being trendy, this is a useful examination of how what is considered standard Japanese food became the standard. This being due as much as anything else to the innovations promulgated by Japanese officialdom to see that Japan's military men (pre-1945) and then Japan's school children (post-World War II) were adequately nourished, with said innovations coming willy-nilly from Western, Chinese, Korean and urban Japanese influences. Call this another exercise in studying how modern nationalism is an exercise in self-invention.… (más)

Katarzyna Cwiertka, lecturer in Japanese studies at Leiden University, presents in this book a history of the development of modern Japanese cuisine (i.e. from the Meiji revolution to the present day). She focuses on the social and political factors that affected the eating habits of the Japanese people, arguing that what is regarded as traditional Japanese cuisine is to a great extent a product of late-nineteenth and early-twentieth century imperial policies. She also argues that a great deal of what is regarded as properly Japanese cuisine is in fact of Western (European and American), Chinese, and Korean origin. Of especial interest is her documentation of the extensive role that military catering played in the creation of a homogeneous national cuisine. A postscript looks at the developments Japanese cuisine has undergone outside Japan. The book is clearly written and accessible to non-academics, with a bibliography that provides English-language sources whenever possible. This is an excellent book that should be of interest to anyone interested in Japanese cooking or Japanese culture.… (más)
