Marian Apfelbaum, born to a Jewish family in Poland, was a child at the outbreak of World War II. He spent the war years in Warsaw, first within the Jewish Ghetto, where his father was a cardiologist at the hospital. In 1943, after the first Ghetto revolt, the family fled through the sewers to the "Aryan" side of the city, where he was hidden by Polish Catholics affiliated with the underground Zegota organization. In 1946, he and his family emigrated to France. In Paris, he attended the Lycée Louis le Grand, studied medicine, and became a physician and ultimately a professor of nutrition. Until 1998, he was the Director of Human Nutrition Studies at Xavier Bichat Medical School. He has written numerous books in his field, including an encyclopedic dictionary of nutrition and a book on risks and fears in eating. In 2007, he published a book on the Warsaw Ghetto Uprising and the two leading Jewish militias, Retour sur le ghetto de Varsovie (English translation, Two Flags: Return to the Warsaw Ghetto), using extensive primary source material from Polish, Jewish and German sources.
