But 9 out of 10 will unanimously concur that a steak and kidney pie with buttered mashed potatoes and peas is good for the soul. Roast leg of lamb, or a wing rib with baked pumpkin and gravy made from the pan juices, is comforting on a winter's evening. Our foods, as well as our appreciation for them, is as sophisticated as any in the world. And our interest in what we eat has become a national hobby. Which is why I have put together this encyclopedia of food. Now if someone asks you what is the difference between Ceylonese tea and Green tea, you can turn to the appropriate page to learn the answer.
