The book talks about her symptoms before, how the doctor diagnosed her, what foods she is allowed and not allowed to eat, and different experiences she has with the disease. This informational book can be used to help students understand Celiac Disease, allergies, food intolerances, etc. "Eating Gluten-Free With Emily" tells the story of a young girl named Emily who is diagnosed with celiac disease. Celiac disease means her body is unable to process gluten in the same way others can. Emily has a special diet that consist of eating foods that don't contain gluten, and some special foods that are marked gluten-free. This book is great for any child with celiac disease, as it breaks the information down in easy to understand terms.
